Christmas cookies……the ultimate tradition
I love Christmas, and I’m so glad that it’s just around the corner. One tradition that I look forward to each year, especially since my son was born, is baking cookies. I don’t think there’s anything more fun than being covered in flour and candies!
My son’s idea of helping is a bit special. Last year he would take handfuls of chocolate chips, take a big bite from them, and then throw them into the batter! I didn’t mention this fact to anyone who ate the cookies!
I wish I could make those beautiful, decorated sugar cookies, but alas I’m too messy! I’ve never been able to make anything that didn’t look like it was made by an 8 year old! So instead of getting frustrated over my lack of artistic ability, I stick to a tried and true cookie recipe, cowboy cookies! It’s a cross between chocolate chip cookies and oatmeal cookies; they are so wonderful and chewy! I love ‘em. So here’s the recipe. I hope you enjoy it, and maybe make some Christmas cookie memories of your own!
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups rolled oats
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F. Sift together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by spoonfuls on greased baking sheets. (I like to use an ice cream scoop.)
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing. YUM!
