- Breakfast- Kashi honey toasted oat cereal with rice milk
- Lunch- baked spaghetti*
- Snack- organic hummus, rice crackers, organic carrot sticks, and fresh apple juice
- Dinner- rice noodle stir fry
- Dessert- organic oatmeal with nuts and dried berries, sweetened with molasses
*Not a detox meal! (I didn’t fall off the wagon. I swear! I was visiting a friend that I don’t get to see very often, and she made a special lunch of baked spaghetti. I didn’t have the heart to tell her I was on a detox and couldn’t eat it, so I had a VERY small portion, maybe a 1/3 of a cup. So I don’t even feel bad, especially since David, my husband, had a piece of sour cream pound cake! That’s right buddy, I’m throwing you under the bus!
The day was pretty uneventful. I chose not to take my first round of pro biotics, because I had a huge fear of it kicking in in the middle of the children’s park, leaving me frantically searching for a bathroom or at least a really dense bush! I shouldn’t have worried, because the “fiber fusion” caplets, that I should have taken, are not that powerful. I would have been fine! I’m such a worrier sometimes.
I have to say that the lack of wheat is probably the hardest thing so far. I made the kids mac ‘n cheese and green beans last night. Let me tell you, it was hard to be happy with strangely textured rice noodle stir fry with them eating mouth-watering mac ‘n cheese right beside me. Luckily, the little piggies ate it all, so at least there was no temptation to eat the leftovers. The stir fry I made was pretty good. The rice noodles were not the most appetizing addition to the meal. The flavor wasn’t so bad because I made a sauce from molasses, garlic, ginger, water, and a little soy sauce, which isn’t on the list of okay foods, to flavor them. The texture was the real problem. They just felt different. I guess it takes some getting used to.
The one draw back for today I noticed was a heavy lethargy that hit me about 2:00. I guess my body’s not used to this new diet yet. I just hope it gets better. Over all though, today was good, I had a nice time playing with the kids and visiting my friend. The food wasn’t horrible, and I didn’t choke on the butt-load of pills I had to take! On a scale of 1-10, I’d give today a 7.
